Creer Lab's pure vanilla extract (absolute) comes from Madagascar, and is characterized by the most intense, balanced and somewhat dark flavor.

With vanilla (Vanilla planifolia, from the Orchidaceae family), most of the fragrance comes from the seeds and the oily liquid surrounding the seeds.  This is extracted from the ripe fruit (pod; frequently — but wrongly — called a bean) in a two-fold process.

Vanilla is different than most spices in that fresh vanilla pods have no taste.  That vanilla flavor you recognize so well is bound as glycoside, and must be set free by enzymatic reaction, induced by a sequence of steamings.
