About coconut oil:
Cocos nucifera is native to Indonesia, and is a member of the Arecaceae or Palmae botanical family. The oil comes from a two-step process:
- First the coconut milk is expressed by pressing; then
- The oil is separted from the water.
Fatty acid constituents:
- Lauric acid (48.62%).
- Myristic acid (19.53%).
- Caprylic acid (9.07%).
- Palmitic acid (7.83%).
- Capric acid (6.37%).
- Oleic acid (4.67%).
- Stearic acid (3.01%).
An important food oil, as well
Virgin coconut oil has several important nutritional properties.
- It contains natural antioxidants, and acts as an antioxidant itself.
- It is rich in fatty acids that have natural antiviral and antibacterial properties.
- It contains Monolaurin, which is the same anti-microbial agent found in human mother's milk. Lauric acid is a medium chain fatty acid, and is abundant in coconut oil. It is considered to be responsible for many of the oil's healthful benefits. The only other abundant source of Monolaurin found in nature is in human breast milk.
